<p>one soft dinner roll or two white-bread slices<br />
1/4 cup warm water.<br />
One small red onion, finely chopped<br />
1 teaspoon salt<br />
1 teaspoon ground allspice<br />
one egg yolk.<br />
1 pound lean ground beef<br />
1/4 cup butter</p>
<p>How to Make.</p>
<p>In a small bowl, softened bread and water. Drain water from bread; squeeze to remove as much water as possible. In a large bowl, combine moisten bread, onion, salt, allspice and egg yolk. Add beef; blend thoroughly, beating with an electric beater or by hand until smooth. Dave in your hands with water. Use your hands to shake beef mixture into 1 inch balls. Melt butter in a large skillet. Over medium heat, Brown meatballs, a few at a time, on all sides. Serve immediately with mashed potatoes and cloudberry borehole-cranberry sauce. Makes four servings.</p>

<p>Cake Ingredients:<br />
2 cups granulated sugar<br />
2 cups all-purpose flour<br />
2 eggs<br />
1/2 tsp baking soda<br />
1 20 oz. can crushed pineapple with juice<br />
1/2 cup chopped walnuts or pecans</p>
<p>Frosting Ingredients:<br />
1 cup firmly packed brown sugar<br />
1/4 cup (1/2 stick) margarine, softened<br />
8 ounces cream cheese, softened<br />
Chopped walnuts or pecans for topping</p>
<p>Preparation Instructions<br />
Preheat the oven to 350 degrees. For the cake, grease a 13 x 9 inch baking pan. Mix the granulated sugar, flour, eggs, baking soda, and pineapple with juice in a mixing bowl. Add the nuts and our into the prepared pan. Bake for 40 minutes.<br />
For the frosting, mix the brown sugar, margarine, and cream cheese in a bowl. Spead on the cake while it is hot. Sprinkle with nuts as desired.</p>

<p>MEATBALLS</p>
<p>1 pound lean ground beef<br />
1 pound ground pork<br />
1/2 cup seasoned breadcrumbs<br />
1/3 cup onion, finely chopped<br />
1/4 cup half-and-half<br />
2 eggs, slightly beaten<br />
4 Tbsp chopped fresh parsley, or 2 Tbsp dried<br />
2 Tbsp chopped fresh oregano, or 1 Tbsp dried<br />
1 tsp salt<br />
1 tsp Worcestershire sauce<br />
1/2 tsp grated lemon peel<br />
1/4 tsp ground allspice</p>
<p>SAUCE</p>
<p>3 Tbsp unsalted butter<br />
3 Tbsp all-purpose flour<br />
1 1/2 cup beef broth<br />
2 tsp dried dill<br />
1/2 tsp salt<br />
1/4 tsp ground nutmeg<br />
3/4 cup sour cream at room temperature</p>
<p>1.  Preheat oven to 375 degrees.</p>
<p>2.  Mix all ingredients thoroughly and shape into 1-inch balls.  Place on the rack of a broiler pan.  Bake until brown, about 20 to 25 minutes.  </p>
<p>3.  Meanwhile, melt butter in a heavy saucepan over low heat.  Gradually stir in flour, cooking and stirring until bubbly.  Add broth, dill, salt and nutmeg.  Remove from heat and stir in sour cream.  Pour sauce over meatballs and serve.</p>
<p>TIPS:  Serve over rice or pasta with your favorite steamed veggies for a delicious meal!</p>
